Once they arrive at our plant, they are manually eviscerated, extracting the skin, wings, viscera, eyes and
mouth.
They are turned over and the peritoneum is removed. Once cleaned, they are stuffed with their own tentacles.
Then they are cooked in balsinas, washed and packed by hand, selecting them by size.
