Bonito Belly with Butter Airas Moniz Los Peperetes

The Ventresca is the most prized part of the White Tuna. It is characterized by its morphology in the form of slices and for being a particularly juicy and tasty part of the bonito.
At Los Peperetes we elaborate canned white tuna belly through a careful process of artisanal elaboration. The expert hands of our packing machines delicately separate each sheet and then introduce them one by one into the can.
To top it off, we fill the tins with the exclusive butter from the artisan cheese factory Airas Moniz.
This award-winning cheese factory from Lugo also produces a very special handmade butter from raw milk from their herd of Jersey cows, from which they extract the cream and then leave it to acidify for 24 hours. This makes it a more complex product with more flavor nuances.
It is recommended to temper the can for 1 minute under hot running water before opening to enjoy the butter in its semi-liquid state.
