Servilio Roble : Ribera del Duero

Varieties: 100% Tempranillo

Elaboration: Partial crushing of the grapes, once destemmed. The grape pulp is placed in 13000 L stainless steel truncated cone-shaped tanks, where a pre-fermentative cold maceration takes place for 7-8 days, achieving a remarkable extraction of colour and primary aromas, typical of the grape. The fermentation temperature is controlled at 26-27 °C and maceration takes approximately 15 days. At the end of the malo-lactic fermentation, the wine evolves in a short ageing of 5 months in French and American oak barrels. Finally, the wine is subjected to clarification and filtration, as operations prior to bottling.

Appearance: clean and bright, intense cherry red colour with purple iridescence.

Olfactory phase: A deep aromatic complexity is perceived, highlighting varietal aromas of black forest fruits such as blackberries and blueberries, red fruits such as currants, as well as fine floral notes (red rose and violet); all these, along with the dairy aromas of fermentation, appear on a background of vanilla, spicy aromas (pepper) and toasted, being perfectly assembled.

Tasting phase: It is tasty and pleasant on the palate. Endowed with a good tannin structure, the aromas are maintained on the palate and the harmony between the fruit and the wood is perceived, culminating in an elegant finish.

Operating temperature: 16°C

Pairing: All types of meat, rice dishes and pasta.



The winery was founded in 2004, on land located in the prestigious town of Pesquera de Duero, in the heart of the Ribera del Duero Denomination of Origin.

Bodegas Servilio – Arranz maintains a family tradition of winegrowers who made their wine in the underground cellars of Pesquera de Duero, applying to the project the philosophy of combining the production of a top quality wine with the tradition that has always preceded our families.

The current winery, with a capacity to vinify 100.000 Kgs of grapes, has state-of-the-art facilities to offer quality wines, aged in oak barrels and with its own style, from the Tempranillo grape grown on the “El Candelero” estate. This unique plot, due to its geographical location, exposure and soil characteristics, is part of the 15 hectares of vineyards owned by the winery, cultivated under strict control in order to achieve the optimum ripening point and the highest sanitary quality of the grapes used to make our wines.

The winery: Bodegas Servilio-Arranz, has a modern production hall designed by the technical team of the winery, to meet the postulates and get the maximum expression of the grape, next to this is the part of storage located so that the wine does not suffer unnecessary displacements that may alter their natural characteristics. The ageing cellar is located next to the winemaking cellar and has been designed with all the necessary technical elements to keep the wine ageing in an optimal environment all year round. At the moment the winery is in expansion phase, designing for it, a building that will house the new offices and an area that will be enabled as a tasting room and that will allow us to organize visits, so that all wine lovers have the opportunity to learn about the facilities of Bodegas Servilio and the process that is followed to obtain our wines.
