With origins in San Fernando (Cádiz), in 2018 Manuel García founded the canning company Conservas Del Abuelo Paquiqui which owes its origin to the founder’s grandfather who had the largest mackerel factory on “the island”.

The old factory was founded in 1952 also in San Fernando and had a staff of 200 people due to its large size and four ships that brought the goods.

Grandfather Paquiqui’s preserves were so famous at the time that he even exported his products to France and Italy.

His grandson has now recovered its traditional flavor by adapting the methods and knowledge that his grandfather passed on to them to modern times.

Its star products are both mackerel and frigate mackerel, which account for most of its production time, although it also works with other products such as bluefin tuna and cuttlefish eggs.

The process from the moment the raw material arrives until its labeling is completely handmade. They are the ones who manually clean and cut the loins to later introduce them in a characteristic way in the cans.
