HARVEST: Approximately ten days before the general harvest, the clusters are cut from those plots that show the best indexes for the production of a sparkling wine. The grapes were harvested by hand and transported to the winery in small crates where bunches are selected by hand.
WINE MAKING: Very intense work on the selection tables and transfer of the grapes to the press where 40% of the must is bled off. Controlled fermentation at 15ºC follows. Maximum care is taken in the rest of the process: racking, bottling, etc., maintaining its aromatic richness and the intensity of its nuances to the maximum.
TASTING SHEET: Lemony golden yellow. The nose is fine, complex and expressive. First, it shows traces of bottle aging and a background of seawater, eucalyptus and white fruits with a deep reminiscence of Albariño. Toasted bread and almond shell background. The palate is full, tasty, creamy and fresh. Again the notes typical of the variety appear with a pleasant and fresh finish.
PAIRING: Ideal temperature between 8 and 10ºC (when the blue galleon appears on the back label). It is a wonderful accompaniment to simple white fish dishes, lobster and any type of seafood.
