Torta del Casar DOP Virgen del Prado is a natural cheese, handmade from raw Merino sheep’s milk, vegetable rennet and salt.
Its rind is semi-hard and has a uniform color with ochre tones without coloring additives. It may present small cracks on its surface. Inside, the cheese has a soft or very soft consistency, white to yellowish in color, and may have rounded eyes typical of ripening distributed in each cut. Its texture is its distinguishing quality, with a great creaminess that melts on the palate.
It is produced at the Doña Francisca cheese factory, a young, artisan, family business in Casar de Cáceres, in the province of Cáceres, Extremadura.
This Extremaduran delicacy with Protected Designation of Origin was awarded third place for the best cheese in the world by a jury of gastronomic experts at the 32nd edition of the World Cheese Awards, held in Bergamo (Italy).
To cut the Torta del Casar, open it with a knife from the top, as if you were removing a lid. It is important to keep the cream in a dry and cold place, between 4º and 10º C, until it is ready to be eaten.
When opened, it is preferable to consume it within 20 days of purchase, because although its flavor may be enhanced, it will lose its irresistible creamy texture.
To fully appreciate its qualities, it is advisable to temper it at about 21º C approximately.
