Before starting the handling process, when the cockles are received at the factory, they are placed in containers of sea water so that they can be naturally de-sanded. Once it is steamed, it is shelled and very carefully washed in warm semi-salted water and then the best sized pieces are selected by hand.

This preparation of cockle, makes the delights of the lovers of tapas. Accompanied with a sauce based on olive oil, garlic, chilli and salt, they give the mollusc a very nice spicy touch. Ideal with white wine or cider and a piece of bread. It is a very popular preparation in the north of Spain.
The cockle comes from the Galician Rias (Arosa and Muros-Noia).
Ingredients: cockles, olive oil, garlic, chilli and salt.
Process: handmade, without preservatives or colouring agents.
