Anchovies in pickled sauce : Los Peperetes

Pickled anchovies from Conservas Los Peperetes.

The anchovies are one of the most desired gourmet snacks throughout the country. Either in the form of anchovies or filleted in vinegar.

In our case the preparation consists of the whole fish, with a process of manual elaboration similar to that of the sardine and accompanied with our tasty homemade marinade, flavoured with pepper and bay leaf.
