After its capture in the Cantabrian coast, its cleaning and maturation in salting respecting a curing period between 12 and 15 months, we elaborate them by hand, turning them into one of the most desired products.

Tips

Since anchovies are a semi-preserved product, they should be kept in a cool, dry place, preferably in the refrigerator,

It is advisable to take them out of the fridge half an hour before serving to ensure that the oil and the temperature of the anchovies are just right.

If you happen to have some anchovies left over, you should keep them in the fridge covered with oil and in a closed container. We also recommend consuming them within a maximum of 2 days. After this time, you can still eat them, but they will have lost many of their organoleptic properties.
