This Iberian acorn-fed pork loin remains for two to three days in the fireplace with holm oak wood for the drying of the natural casing; to pass to the natural drying sheds where it finishes its curing, all of which gives it its unique flavour.
Marinated with salt, natural paprika, spices and stuffed in natural casing.

It undergoes a curing-maturing process of more than 70 days.
