The selection of the best catches at dawn in our spring coastal fishing in the Cantabrian Sea and the search for the largest anchovies, give us as a final result the best salted fish, pampered and cured in natural sea salt for an average of one year in the cellar.

It is then packaged with a soft Extra Virgin Olive Oil of the highest quality, thus achieving a perfect pairing for the most demanding palates, reminding us in its bouquet what we could define as the “ham of the sea”.

The Limited Series is elaborated with the selection of the BIGGEST QUALITIES of Bocarte/boquerón selected from the DEL ALBA catches acquired in the Cantabrian Sea ports in the months of April and May, when the Bocarte/Boquerón reaches its maximum quality for the elaboration of the Salazón, which will remain curing in the cellar for an average of one year.

Later it is elaborated in appetizing fillets in a totally handmade way where only a few expert Cantabrian filleting hands will be able to pamper them and elaborate them in small LIMITED PRODUCTIONS where the MAXIMUM QUALITY will prevail over the quantity.

Finally they will be embraced by one of the best EVOOgold medal for the best oil in the world in 2012, 2013 and 2015 that will make a perfect pairing for the most demanding palates.

RECOMMENDATIONS FOR USE

SEMICONSERVE: Keep refrigerated between 5ºC and 12ºC.
Choose the right format depending on the number of diners.
Remove from the fridge 5 minutes before serving.
Optimum temperature of the fillet for consumption, 16ºC-18ºC.
Do not serve on a hot plate.
